In this work, free acidity, pH, ash, nitrogen and water contents were measured, besides the total polyphenol content and the antioxidant capacity of the peel, the shell and the pulp of the fresh fruit and the processed guava pulp and jam. The highest phenolic content was found in the guava skin la (10.36 g/100 g skin) and the lowest in the jam (1.47 g/ 100 g jam), in dry weight. The antioxidant capacity of the skin was 10 times higher than that of the pulp, and the jam was twice that of the shell.

A cross-sectional population based study was carried out on 981 women aged 20 to 60 years living in Southern Brazil. Abdominal adiposity was assessed by waist circumference (WC) = 88 cm.     Raspberries (Rubus idaeus) were osmotically dehydrated by applying a conventional method under the supposition of a homogeneous solution, all in a 62% glucose solution at 50 degrees C. Raspberries (Rubus idaeus) were also osmotically dehydrated by using ohmic heating in a 57% glucose solution at a variable voltage (to maintain temperature between 40 and 50 degrees C) and an electric field intensity &amp;lt;100 V/cm. When comparing the results from both experiments it was evident that processing time is reduced when ohmic heating technique was used. In some cases this reduction reached even 50%. This is explained by the additional effect to the thermal damage that is generated in an ohmic process, denominated electroporation.

            <title>[Synergistic effect and quantification of 5'-ribonucleotides in a chicken soup]</title>

            <description>The objectives of this study were: (1) to determine, through a sensorial panel, the synergistic effect on the flavour of a dehydrated chicken soup to which flavour enhancers were added and (2) quantify the 5'-ribonucleotides in such matrix. The intensity of the chicken flavour was determined using a previously trained 6-member panel. The 5'-ribonucleotidos were determined using the HPLC technique. The results using the panel demonstrated that the combination of GMS, IMF and GMF used potentiates significantly (p &amp;lt; 0.05) the flavour of the dehydrated chicken soup, which allows the use of less quantity of them to obtain the same effect on the flavour. One hundred volunteers over 60 years were included in this cross-sectional study. Serum levels of vitamin B12 and folate were measured. In addition some biochemical and anthropometric indicators were also evaluated. Considering serum values of vitamin, 30% had vitamin B12 deficiency, 52% normal status and 18% with high levels.             <description>The objectives of this research were to obtain the age of menarche in school age girls from the Northwest of Mexico, and to establish the relationship between the latter with their socioeconomic level, body weight, and height. The sample was taken from 857 girls between 7 and 17 years old from different socioeconomic level sectors. The age of menarche of these girls was determined by the statu quo method. The value found for menarche was 12.06 +/- 0.44 years old. We also found an association of menarche to height (p &amp;lt; 0.01) and to socioeconomic level (p &amp;lt; 0.01). The initial cooking time was fixed at 6 hrs. The processed bean samples were dried, ground and analyzed for L-Dopa and protein.
