SummaryBeef‐related health scares have, in the past, played a role in decreased consumer confidence in purchasing beef in developed countries. Beef that is safe, nutritious and of good eating quality is of increasing importance to beef consumers. Over the past 5 years, research has been carried out in the ProSafeBeef project to develop technologies and/or processes to ensure that the European beef chain thrives. Research has been conducted in a number of areas including food safety, nutrition, novel‐processed beef products and consumer research. ProSafeBeef has made ground‐breaking advances in these areas and some of the key successes emerging from ProSafeBeef are highlighted in this paper. (Source: Nutrition Bulletin)

SummaryReducing the amount of food and drink that is wasted is a key element in developing a sustainable food system. In the UK, the largest contribution to food waste is from homes: 8.3 million tonnes per year, costing consumers £12 billion and contributing 3% of UK greenhouse gas emissions. This paper describes recent insights gained from research by the Waste and Resources Action Programme (WRAP) and others into the types of food wasted, why it is wasted and what can be done to minimise it. The research methods used – which have parallels with dietary research – are described and findings of interest to the field of nutrition are highlighted, including the impact of waste on intake (e.g. 0.8 portions of fruit and vegetables are wasted per person per day). The activities under...

SummaryAs policy makers grapple with the challenge of producing more food sustainably, consumers will increasingly be affected in terms of the food on offer and the choices they are encouraged to make. Which? research shows little awareness among consumers of the environmental impact of what they eat, but many would be open to making more sustainable choices if it was easy to do so. Simpler, user‐friendly information and advice about how to make more sustainable choices is necessary. Much can be learned from efforts to enable healthier choices, including the lack of consistent, user‐friendly labelling. But consumers' choices are determined by many factors and conflicting demands as well as synergies need to be made more explicit. Many of our choices are determined before food reaches t...

SummaryFood security is increasingly a major political issue. Furthermore, growing public awareness about where our food comes from and concerns about the sustainability of some food production systems have meant that farmers and growers are producing food to ever higher standards of environmental protection, quality, hygiene and traceability. Therefore, the real question in any debate about sustainability is: ‘how can British horticulture produce more food to feed more people and make a profit from doing so, while using less land and resources and improving the environment at the same time?’In 2009, the Department for Environment, Food and Rural Affairs announced the establishment of a Fruit and Vegetables Task Force, which has set a target to increase UK self‐sufficiency of indigen...

Increasing fish consumption for better health – are we being advised to eat more of an inherently unsustainable protein?

SummaryThe health benefits of fish consumption are manifold and well understood from scientific and nutritional perspectives. Yet, seafood is the last great hunted human food resource, and a number of the world's fisheries are currently depleted through overfishing. There is a dilemma for consumers who, in line with UK Government advice, wish to eat seafood as a healthy, nutritious (and tasty) lifestyle choice and their concerns over the sustainability of the fish that they enjoy. This paper explores this dilemma by examining the status of world seafood stocks and discussing some of the strategies used by seafood retailers and brands to ensure that responsible and sustainable choices are available for the UK consumer.
SummaryMeat and milk production generally gets a bad press when it comes to discussions around climate change and food production. However, with a rising population, a balance has to be found between the environmental cost of producing and the benefits in terms of food security. Consequently, sustainable production is the byword. The beef, sheep meat, pig meat and dairy industries all have specific challenges in work to reduce their environmental impact. This paper examines some of these challenges, the research which has been undertaken into their scale, routes being exploited to improve efficiency and what gains have already been achieved. It also looks at some of the mitigating factors of dairy and livestock production that help mitigate any environmental costs and ensure we are making ...

SummaryThe main constituents of a healthy diet are generally accepted but which dietary patterns are both healthy and sustainable? This is proving a complex question to answer given the many challenges that face the global food system, particularly the need to produce more food with fewer resources to feed the world's growing population. It is likely that change to the current UK diet could help ease the pressure on the global food system but it is important that this is balanced with the physiological requirement of nutrients for health. Therefore, the challenge ahead is to identify dietary patterns that provide us with the many nutrients we need for health, in appropriate amounts, that are also equitable, affordable and sustainable. This paper explores the challenges for the global food ...

SummarySustainable consumption is a complex, multifaceted area requiring a partnership approach across the food chain to reduce the environmental impacts of the food we choose to consume. Communicating the environmental benefits of products and the importance of wasting less food, supporting honest environmental labelling and defining methodologies for sustainable food will help inform these choices. Government initiatives to support sustainable fish species consumption, reconnect people with food and work towards a zero‐waste economy will help to tackle environmental and climate change impacts. The Government is committed to addressing global challenges identified by Foresight to meet increasing food demand with less environmental impact. Evidence to underpin sustainable food policy req...

SummaryA major challenge for the future is to satisfy the nutritional needs of a much increased global population and to produce the additional food using less land, water and energy. Much of this increased food production will be from emerging developing countries. Sustainable intensive food production systems employing new genetic and precision technologies will be essential for this purpose. Food prices are likely to remain at a higher level and be more volatile than in the past and this will impact most on vulnerable poor people in the developing world. This is a major concern and should be a priority for action both nationally and internationally. So, while it is feasible to deliver the forecast of 70% increase in food supplies required by 2050, this will only be sustainable if the si...

SummaryAn International Longevity Centre Report (ILC‐UK) on older people and functional foods examines current dietary recommendations for older people, looks at consumer behaviour towards functional foods and asks whether functional foods have a role to play in older people's diets.
Ketosis, ketoacidosis and very‐low‐calorie diets: putting the record straight

SummaryVery‐low‐calorie diets (VLCDs) are used to treat obesity, often in a non‐clinical setting, and the typical formulation of a minimum of 50 g carbohydrates daily can induce a mild dietary ketosis. This clinically benign state is sometimes confused with the non‐metabolically adapted state of ketoacidosis, and this misunderstanding may lead to the rejection of VLCDs as a suitable obesity treatment. This paper summarises and discusses the difference between physiological ketosis and pathological ketoacidosis, the benefits of ketosis‐inducing weight‐loss regimen such as VLCDs and why ketoacidosis should never be the diagnosis in a non‐type 1 diabetic on a carbohydrate‐restricted diet.
An update on UK Vitamin D intakes and status, and issues for food fortification and supplementation

SummaryVitamin D is unique among the essential nutrients in that it can be made in the body via exposure of the skin to sunlight. There are few rich sources of vitamin D in the diet. Vitamin D is essential for maintaining healthy bones and deficiency of vitamin D causes rickets in children and osteomalacia in adults. In the UK, there is evidence that low vitamin D status is prevalent in the population and older adults living in institutions are particularly at risk. There are two forms of vitamin D that can be added to foods and drinks: vitamin D2 and D3. They have somewhat different structures, and there are some differences in the way they are metabolised by the body. Overall, the evidence for the relative effectiveness of vitamin D2 vs. D3 is mixed, and more studies are needed to provide...

SummarySchool food has been provided to pupils in England for many decades. From the mid‐1970s, however, both the number of meals provided and the quality of food have declined. Legislation was introduced in 2001 to ensure that school catering services provided healthy options, but surveys of consumption in 2004–2005 and in 1997 showed that improved availability of healthy options in school had little or no impact on children's eating habits. In February 2005, Jamie Oliver presented a series of television programmes highlighting the poor quality of school food. The government responded by setting up the School Meals Review Panel to make recommendations on how to improve school food and the School Food Trust, a non‐departmental public body to promote the education and health of childre...

SummaryBreastfeeding provides the optimum nutrition for infants, supplying macro‐ and micronutrients in readily absorbable forms. It is almost 100 years since the first artificial feeds were created in an attempt to ‘humanise’ cows' milk. Formula improvements have taken place over the decades; advances in food technology supported by clinical studies have contributed to the aim of matching the composition and functional outcomes of breastmilk in formula manufacture. It is possible to alter the structure of triglycerides in vegetable oil, in order to more closely match their composition and structure in breastmilk fat. Clinical research in infant formula for pre‐term and term infants supports the safety and beneficial nutritional outcomes of this innovation, which are the subject ...

SummaryPregnancy is an important window in which to communicate to women about diet and lifestyle and encourage behaviour change. There appears to be an interest among pregnant women regarding how much and what kind of physical activity is appropriate during pregnancy. There are physiological changes that occur in pregnancy, which mean that pregnant women should be cautious when physically active and women should check with their midwife or general practitioner about what activities are suitable. For most women, moderate physical activity can be undertaken throughout pregnancy without adverse effects and physical activity can be beneficial for both mother and baby.
SummaryAppetite control can be effectively investigated within an energy balance framework. When people are sedentary, weight gain is favoured because appetite is poorly regulated, and energy expenditure is low. Consequently, people can exist in a chronic state of positive energy balance. This positive energy balance can be construed as an energy gap. This gap that leads to weight gain and maintains the weight different between overweight and lean people is larger than usually recognised. Physical activity can influence body weight by moving people from a sedentary ‘non‐regulated’ zone into a physiologically ‘regulated zone’, where energy expenditure and energy intake are more in equilibrium. In this regulated zone, physical activity improves the sensitivity of appetite control a...

SummaryAn up‐to‐date food composition database with detailed information on the energy and nutrient content of nationally consumed foods and drinks is an invaluable tool for determining the nutritional and health status of a population and for developing national nutrition policies. Until recently, Turkey lacked such a database and has had to rely on data extracted from databases developed for use in other countries. However, with support and encouragement from the European Union (EU) funded Network of Excellence, the European Food Information Resource (EuroFIR), the Food Institute (FI) of the Scientific and Technological Research Council of Turkey, Marmara Research Centre (TUBITAK MRC), has strengthened its technical knowledge on food composition data management and, as a related resu...

SummaryThis paper summarises and discusses some of the aspects of the Public Health White Paper, Healthy Lives, Healthy People, published for consultation at the end of 2010, and the framework of the Public Health Responsibility Deal, published in March 2011 by the UK government. Healthy Lives, Healthy People emphasises that a one‐size‐fits‐all approach to public health improvement has been shown not to work as challenges vary from one neighbourhood to the next, and a new approach that empowers individuals to make healthy choices and gives communities the tools to address their own needs is required. It highlights the government's intention to shift power and decision making on public health matters to local authorities, with ring fenced budgets. A feature of the document that has pr...

This article will discuss EFSA opinions on health claims as of April 2011. EFSA is engaging with the food industry through stakeholder meetings, guidance documents and web‐consultations. More research is needed to establish consumers’ understanding of health claims and continued engagement and dialogue between EFSA's Dietetic Products Nutrition and Allergies (NDA) panel and the food industry is required, so that the consumer is protected from misleading health claims and innovation is encouraged in the food industry for the production of healthier food products.
SummaryThe report from the UK government's Foresight team, The Future of Food and Farming: Challenges and Choices for Global sustainability, published in January 2011, explores the pressures on the global food system between now and 2050, and identifies the decisions that policy makers need to take today and in the years ahead in order to ensure that the future global population can be fed sustainably, and underlines the need for the public health and food supply sustainability agendas to be harnessed together. The global population is now 6.8 billion and is estimated to reach over 9 billion by 2050. Not only is the world's population expanding but it is also undergoing rapid development, and with this comes increasing demand for protein rich foods, especially meat and dairy products.
SummaryOverweight and obese people appear to be at greater risk of suboptimal vitamin and mineral status compared with people of a healthy weight. Nutrients most affected include vitamin D, vitamin B12, carotenoids, folate, vitamin C and iron. The reasons are unknown but may be caused by poor diets, increased requirements or obesity‐related changes to nutrient absorption, excretion or metabolism, or a combination of these. Sequestration of fat‐soluble vitamins by adipose tissues is also a major factor. Although dietary assessment in obese populations is hampered by under‐reporting, there is evidence that dietary patterns characterised by energy‐dense, processed foods are more common in groups with a higher body mass index. Dieting practices, bariatric surgery and the use of anti‐...

Conclusion• Acknowledgements• ReferencesSummaryAccording to the latest census, non‐white minority ethnic groups made up 7.9% of the UK's population in 2001. The largest of these groups were South Asians, Black African‐Caribbeans and Chinese. Studies have shown that some minority ethnic groups are more likely to experience poorer health outcomes compared with the mainstream population. These include higher rates of cardiovascular disease (CVD), type 2 diabetes and obesity. The differences in health outcomes may reflect interactions between diet and other health behaviours, genetic predisposition and developmental programming, all of which vary across different groups. As is the case for the rest of the population, the dietary habits of minority ethnic groups are affected by a wid...

SummaryCooking in schools is an important part of a child's personal development. Children who develop adequate cooking skills and nutritional knowledge are more likely to make healthier food choices in later life. Children carry these new found skills through to adulthood, and there is evidence to suggest that an increased nutritional awareness and ability in cooking skills helps individuals to make effective dietary choices. In the past, there have been a number of cooking‐related activities aimed at children and students. Grainchain.com's Inspire! competition aimed to encourage teachers who had developed inspiring cooking‐skills related lesson plans to promote the dissemination of effective teaching ideas to less confident colleagues. The Inspire! competition highlighted the imaginati...

SummarySince the formation of a coalition government in May 2010, there have been substantial changes in government policies relating to the education system in England and Wales. The previous Labour administration strengthened education in food and nutrition and promoted healthy eating in schools. The National Curriculum relating to food technology states what pupils should learn, making reference to practical cooking skills, food safety and hygiene and nutrition and healthy eating. This remains a statutory requirement. The Comprehensive Spending Review (CSR), announced in October 2010, meant that substantial financial cuts would be made across government, including the Department for Education. A huge swathe of quangos has already been cut, including the Qualifications and Curriculum Devel...

This article reflects the current changes that are influencing what is happening in food technology classrooms in secondary schools in England from the perspective of a recent head of Food and Advanced Skills Teacher. Accordingly, this article commences with a review of the changeable position of food technology within the school curriculum, followed by a discussion of each of the Key Stages1 (3, 4 and 5) in light of recent developments that have been adopted to support the delivery of good food education in England.
Cooking Communities: using multicultural after‐school cooking clubs to enhance community cohesion

SummaryThere is concern over the lack of cooking skills among young people in the UK. Studies suggest that teaching young people cooking skills can help to improve dietary quality. In light of this evidence, in 2009 Cooking Communities piloted a series of multicultural after‐school cooking clubs at secondary schools in Leeds, UK. These clubs aimed to develop young people's food preparation and cooking skills as well as to enhance their understanding of different cultures. Ten 1.5 h cooking clubs were delivered over a 10‐week period. Each session concentrated on a recipe linked to a different cultural event, such as bread for harvest festival and honey cake to celebrate Jewish Rosh Hashanah. Pupils completed questionnaires both before and after attending the cooking clubs to assess th...

Why we eat what we eat: the role of autonomous motivation in eating behaviour regulation

SummaryThis paper addresses the issue of the self‐regulation of eating from two different perspectives. One is strongly based on social cognitive theories, whereby it primarily emphasises functional and executive aspects of behaviour change, broadly named self‐regulatory skills. The other assumes that humans are active and self‐directed organisms and emphasises particular psychological processes associated with optimal functioning, with a special emphasis on motivation and perceived autonomy. Although these perspectives clearly do not represent opposing approaches, this article attempts to illustrate how they differ when applied to promoting health behaviour self‐regulation, highlighting some implications for patient counselling. Primarily, this article demonstrates that motivation...

This study suggests that many children may not be consuming sufficient amounts of the food provided in schools. Therefore, it cannot be assumed that the provision of school meals that conform to the School Food Trust guidelines will be of nutritional benefit to all children concerned. Bearing this in mind, more needs to be done to provide menus that are both healthy and enjoyable for children, so that they will want to consume the foods provided. Parents also need more advice regarding how they can provide their children with a healthy packed lunch, possibly via the introduction of a government‐led packed lunch policy, particularly in schools from areas of lower socio‐economic status. Although there was only a small sample of food diaries in this study, the findings suggest that socio...

SummaryStudies suggest that eating breakfast (as opposed to skipping breakfast) has nutrition and health benefits. However, it is not altogether clear whether these benefits are attributes of breakfast as a meal or meals that include breakfast cereals. To explore associations with nutrient intakes according to the type of breakfast chosen, we extracted data on all foods consumed at breakfast time (0600–1000 h) from the individual weighed food records of respondents in the National Diet and Nutrition Survey of adults aged 19‐to‐64‐years. Seven days of data were available for each person, giving a total of 12 068 potential breakfast‐eating occasions. Our hypotheses were: (1) that adults who skip breakfast have lower‐quality diets on that day than those who eat breakfast and (2...

SummaryThis paper provides an update of a previous review ‘Red Meat in the Diet’ published in the Nutrition Bulletin in 2005. An update on red meat consumption levels in the UK and other countries is provided, and a summary of the nutritional content of red meat in the diet is given. Current evidence on dietary and lifestyle factors associated with red meat consumption and the effects of red meat intake on health and chronic disease outcomes are discussed. As there is now continued debate about the environmental impact of different aspects of our diet, sustainability issues regarding red meat were also discussed.
The impact of bitter perception and genotypic variation of TAS2R38 on food choice

SummaryA variation exists in the ability of individuals to detect bitterness from a group of compounds called ‘thiourea’ which are found in foods such as cruciferous vegetables. This has led to people being categorised as either super, medium or non‐tasters, and is due in part to single nucleotide polymorphisms (SNP) of a bitter taste receptor gene, taste receptor, type 2 (TAS2R)38. The density of fungiform papillae (FP) which houses the taste buds may also affect taster status, and may lead to supertasters being more sensitive to oral sensations such as burn from chillies and textural properties from fats, and even fibre in bread. The TAS2R38 genotype and FP density may contribute to food choice, particularly glucosinolates which are found in cruciferous vegetables containing a thio...

SummaryIn 2004, The UK government advice stated that consumers should increase fish consumption to two portions a week, one of which should be oil‐rich fish. However, survey data show that this advice has not been acted upon by most members of the public. In addition, limited data on consumer attitudes highlight barriers to increased fish consumption, such as concerns about buying and cooking fish, perceptions that fish is expensive, and worries that fish meals may not be eaten by all family members. The ‘two‐a‐week’ message is underpinned by strong scientific evidence for heart health, while weaker emerging evidence associates certain nutrients found in fish with a lower risk of immune dysfunction, normal brain development in infants, insulin sensitivity and maintenance of cogni...

SummaryAssessment of the nutritional quality of some selected ethnic foods consumed in Italy was performed within the framework of the European Food Information Resource (EuroFIR1) Network as part of the ethnic foods Work Package.A definition of ethnic and modified ethnic foods, as well as guidelines on the characterisation of immigrant populations and a detailed stepwise analysis of the ethnic food market, have been developed within the EuroFIR project. These were the basis for selecting ethnic foods in Italy for nutritional analysis. Four main immigrant groups (Asian, Latin American, African and Eastern European) were identified as commonly selected from those residing in Italy, and 25 dishes or composite foods consumed by these ethnic groups were selected.
The role of breakfast cereals in the UK diet: headline results from the National Diet and Nutrition Survey (NDNS) year 1

SummaryThe first results from the new rolling programme of the UK's National Diet and Nutrition Survey (NDNS) have been published. The survey found that breakfast cereals were consumed by about 50% of those children and adults taking part, and the average amount eaten was generally in line with the recommendations by the European breakfast cereal association on portion size. Breakfast cereals provided only a small proportion of the total intake of fat, saturated fat, non‐milk extrinsic sugars and sodium, as well as contributing useful amounts of fibre (as measured by non‐starch polysaccharides). Similarities regarding breakfast cereals and their contribution to the UK diet were seen with this survey and the recent Low Income Diet and Nutrition Survey.
SummaryBoth wild and cultivated mushrooms have been consumed by humans for their nutritional and medicinal benefits. Nutritionally, mushrooms are low in energy and fat but high in protein, carbohydrate, and dietary fibre. Mushrooms contain a variety of minerals and trace elements such as potassium, and copper and vitamins such as riboflavin, niacin, and folates. They have been used as food for centuries because of their unique taste. Apart from being recognised as a nutritious food, certain mushrooms are also an important source of biologically active compounds with potential additional medicinal value in Chinese medicine. Bioactive secondary metabolites found in mushrooms include phenolic compounds, sterols and triterpenes. In vitro and in vivo studies with mushrooms and isolated bioactiv...

Dietary fat should supply at least 15% of food energy including 2.5% energy and 0.5% energy as linoleic acid and alpha-linolenic acid respectively: docosahexaenoic acid may also need to be supplied in infants. The proportion of energy from fat is not linked to risk of obesity, cardiovascular disease and cancer. The total cholesterol/HDL cholesterol, which is the most robust lipid indicator of risk of coronary heart disease (CHD), is lowered by unsaturated fatty acids, increased by trans fatty acids and not affected by saturated fatty acids compared with carbohydrates. Using clinical outcomes as endpoints, trans fatty acids increase, polyunsaturated fatty acids decrease and monounsaturated and saturated fatty acids have no effect on CHD risk. Recent recommendations for the prevention of CHD...

Women's diets are of interest as they not only impact on wellbeing and risk of chronic disease in women themselves, but also influence pregnancy outcomes and infant health. UK dietary surveys show that, while some improvements have occurred, intakes of key micronutrients, particularly iron, vitamin D, calcium and folate remain below recommended levels. Women's diets are also too high in saturated fat and salt, and low in fibre, oily fish and fruits and vegetables. Evidence suggests that certain chronic conditions are influenced by dietary components, e.g. inadequate calcium and vitamin D intakes reduce bone density, salt and saturated fat increase cardiovascular disease risk, excessive alcohol intakes increase cancer risk, low intakes of long chain n-3 fatty acids may adversely affect feta...

A healthy rate of weight loss of 0.5[ndash]1.0 kg/week can be achieved by invoking an energy deficit of 450[ndash]900 kcal/day. This assumes an energy cost of weight loss of 6300 kcal/kg. This value will increase with percent body fat. Diet and physical activity strategies should be combined to lose weight. However, dietary approaches to weight management appear most efficacious for initial weight loss. Energy density should be the cornerstone of dietary weight reduction strategies because it helps people develop and optimise healthy eating habits that are sustainable in the longer-term. However, healthy diets for weight management should be seen as a package including reduced fat, energy density, sugars and salt, increased fibre, protein and water content of foods. Healthy diets also have...

Man has moved rapidly from the hunter-gatherer environment to the living conditions of the rich industrialised countries. The hygiene hypothesis suggests that the resulting changed and reduced pattern of exposure to certain critical micro-organisms, mostly derived from mud, animals and faeces, has led to disordered regulation of the immune system and, hence, to increases in chronic inflammatory disorders such as allergies, inflammatory bowel diseases and autoimmunity. Epidemiology, backed up by laboratory models, indicates that the relevant organisms are those that have very long associations with the mammalian immune system, traceable back to the Palaeolithic or earlier. Often, these organisms have been present as commensals (notably in the intestinal microbiota), environmental 'pseudocom...

A diet high in fruits and vegetables has been associated with a lower risk of some diseases, including cardiovascular disease. Besides food constituents, such as fibre or beta-carotene, other bioactive plant compounds such as polyphenols have been suggested to contribute to this protective effect. Apples are one of the most popular fruits in the UK, and apples and apple products, such as fruit juices and apple purées, contribute to the total polyphenol intake of the UK population, although data on the extent of their contribution are not available. The aim of this review was to summarise the evidence available from human studies on the effect of polyphenols found in apples on cardiovascular risk factors, including blood lipids and blood pressure. The literature search comprised randomised...
