How we taste can be dramatically affected by suggestions and expectations.
Does pouring plain old tap water into fancy bottles make it taste better? Yes. At least in it did in a Penn & Teller episode on bottled water (please watch this video- very entertaining). Penn & Teller went inside a southern California restaurant that featured a water sommelier that dispensed extravagant water menus to the patrons. The patrons had no idea that all of the fancy bottles of water were filled with the same water from a water hose in the back of the restaurant. Patrons were willing to pay $7.00 a bottle for L’eau Du Robinet (French for faucet water), Agua de Culo (Spanish for ass water), and Amazone (filtered through the Brazilian rainforest’s natural filtration system).
How do cues pri...

Human beings are creatures of habit, which is why Spencer Johnson sold more than ten million copies of his book, Who Moved My Cheese?. Business executives sit down to PowerPoint presentations based on it, and depressed patients watch the Who Moved My Cheese? video during group therapy in hospital psychiatric units across the country. (Who would have thought corporate America and psych ward programs had so much in common?)
The story is about two mice, Sniff and Scurry, and two “Littlepeople,” Hem and Haw, who live in a maze of cheese stations, some filled with cheese and others empty. When Cheese Station C runs out of cheese, the two mice immediately search the maze for other cheese stations, while Hem and Haw overanalyze their situation, convinced that one day the old cheese wi...

By Walter OlsonThis weekend the Washington Post and New York Times took a closer look at a development mentioned in this space a while back and in a related Cato audio, namely growing federal pressure on small producers of artisan and farmstead cheeses. Here's the Post:
....artisanal cheesemakers, and their boosters in the local-food movement, say they are being unfairly targeted. They say the FDA does not understand their craft and is trying to impose standards better suited for industrial food companies. ...
Listeria is ubiquitous in the environment, but the FDA has a zero-tolerance rule for it in ready-to-eat food such as cheese. If the bacteria are present, the food is considered adulterated and cannot be sold. Some countries, including cheese-loving France, tolerate minute amounts of ...

Luckily I got chunks of Aged Cheese, Larabars, and Sliced Roast Beef to see me through mornings at motels when the “Complimentary Breakfast Bar” is (sometimes) stocked with ONLY Gluten-Contaminated items.
This is a poweful invitation to gluten relapse. The McD’s is just around the corner. But I know if I go there for breakfast, I am more likely to relapse. And I really don’t need that.

By Walter OlsonLast week the New York Times reported on the story of Estrella Family Creamery, an award-winning, very-small-scale producer of raw milk farmstead cheeses in Montesano, Wash. The family faces a Food and Drug Administration ban on its products because the food pathogen listeria has been found in its facilities; when it expressed defiance, the FDA proceeded to stage a raid to seize its entire cheese stock. It’s not easy to sort out how large a health risk may be involved (listeria, a widely disseminated form of bacteria, poses a real danger of food poisoning, but no actual illness has been traced to Estrella cheese). I was struck, in any event, by these paragraphs from the Times account:
“If the F.D.A. wanted to shut down the U.S. artisan cheese industry, all they’d ...

From the New York Times:
Domino’s Pizza was hurting early last year. Domestic sales had fallen, and a survey of big pizza chain customers left the company tied for the worst tasting pies.
Then help arrived from an organization called Dairy Management. It teamed up with Domino’s to develop a new line of pizzas with 40 percent more cheese, and proceeded to devise and pay for a $12 million marketing campaign.
Consumers devoured the cheesier pizza, and sales soared by double digits. “This partnership is clearly working,” Brandon Solano, the Domino’s vice president for brand innovation, said in a statement to The New York Times.
But as healthy as this pizza has been for Domino’s, one slice contains as much as two-thirds of a day’s maximum recommended amount of saturated fat, which...

Dairy Management supports this troubling trend by encouraging fast-food restaurants to market new products laden with high-fat cheese. Its efforts include helping Domino's develop extra-cheese pizzas containing two-thirds of the daily recommended amount of saturated fat per slice, according to a recent story in the New York Times.""A copy of Planeat the movie needs to be given to every member of the US Senate - at least then they can't say 'we didn't realise'" says London Nutritionist Yvonne Bishop-WestonNutritionists London (Source: Heal...

8 Ways to Manage Anxiety on an Anniversary

Most of us circle a few days of the calendar year that we know will be difficult to get through: the anniversary of a death, traumatic event, or even happy occasion. These dates are charged with emotion.
Sometimes we feel trapped by these dates — like there’s nothing we can do to stop them. The approaching date creates a sense of panic and anxiety in many of us, and we can feel out of control. The one benefit from anniversary anxiety is that we can predict it and therefore prepare for it. Here are 8 ways to do just that.
1. Forecast your emotions.
You’ve circled the day. You know it’s coming. Now get honest with yourself about how you might feel on that day. If it’s the anniversary of a death of a loved one, get ready to celebrate that person’s life wit...

Answer to Yesterday’s Question: Human growth hormone (hGH) sounds like a mad-scientist serum that’s used to grow pod people, but it’s actually a naturally-occurring hormone that builds muscle, burns fat, raises energy, and maintains lower blood sugar levels.
You can feel it in the air – it’s almost the weekend. And there are a lot of things we want to get done in the next two days:

Get in some personal TLC time.
Whether this means having an orgasm (solo or not) or getting a massage, it’s going to be all about us at some point this weekend.

Read.
The weather is perfect for just sitting outside with an iced tea and getting caught up in a story. An added bonus? Reading will boost our brain power.

Sample some fancy cheeses.
It’s been a while since we took a trip to the local fromagerie (we took French in college, no big deal) to buy some cheese we can’t afford. But it’s totally worth it, because dairy could reduce our risk of heart disease.

Rent a movie.
Going to the movies nowadays will set you back quite a ...

I like pizza. Sue me. I’m also partial to wheat, and though I don’t have celiac disease – unlike 3 million other Americans – my body (in particular, my skin) reacts very badly to gluten, and has for years. This seriously bums me out, but also makes me determined to find foods that taste good (I mean really good, not soggy cardboard good) without the benefit of gluten. Blisstree’s resident Baker Chick recently went on a hunt for delish gluten-free pastas and frozen Mexican meals, and I just did a similar taste test with frozen pizzas. (All three are topped with real cheese, so obviously aren’t suitable for the lactose-intolerant crowd.) Oh, and if you’re a DIY kind of person, check out this raw, gluten-free pizza crust recipe from our resident (and hot) che...

We know, this sounds like a hoax, but some scientists are saying that whey, a milk protein and by-product of cheese production, could actually be used as an alternative power source. The milk protein contains sugars that, when broken down by bacteria, actually release small amounts of energy. That energy can actually be harnessed in what are called microbial fuel cells.
Whey is produced in large quantities when making cheese, and the organic matter is actually considered an environmental hazard, forcing factories to pay for safe disposal. The use of whey for microbial fuel cells not only provides a great, natural alternative source of energy, but it also helps solve the problem of whey disposal.
Though whey-powered fuel cells aren’t efficient enough to run cars at this point, scienti...

I also like the fact that dairy products (e.g. cream, cheese) are relatively rich in protein and fat, and (importantly) not so rich in carbohydrate. Their nutritional profile is, therefore, kinda in line with ‘primal’ foods such [...] (Source: Dr John Biffa's Blog)

DISCLAIMER: I am no Barbara Streisand. I’ve never taken a singing lesson in my life. Not one. (Ed. - Really??)
The inspiration for this song came two weeks before Thanksgiving when I received a call from my doctor: we had better get together a plan for lowering my cholesterol.
Yeah. Sure. Getting to it… right after I fix my pituitary tumor, abnormal aortic valve, bipolar brain, and facial fungus.
My high cholesterol is not a new issue. Somewhere around the time David was conceived I found out that my cholesterol scores were higher than my verbal SATs. But for the last six years I didn’t do anything about it because (honest confession coming up here) many of those days I was so depressed that I really wanted to be with God in his mansion upstairs. Dropping dead of a heart...

My “9 Holiday Depression Busters” are featured in a Beliefnet gallery. You can get to it by clicking here.
It’s supposed to be the most wonderful time of the year–but not if negative emotions take hold of your holidays. So let’s be honest. The holidays are packed with stress, and therefore provoke tons of depression and anxiety. But there is hope. Whether I’m fretting about something as trite as stocking stuffers or as complicated as managing difficult family relationships, I apply a few rules that I’ve learned over the years. These 9 rules help me put the joy back into the festivities–or at least keep me from hurling a mistletoe at Santa and landing myself on the “naughty” list.
1. Expect the Worst

October 12, 2009To visit France is to experience cheese in its infinite variety of aromas, flavors and textures. The French take their cheese seriously, and frown on the North American practice of using pasteurized milk to make cheese. Indeed, European cheeses that wish to boast a "Protected Denomination of Origin" – the cheese equivalent of wine's "Appellation d'Origine Contrôlée" – must be manufactured from raw milk. The US Food and Drug Administration permits the manufacture and marketing of hard cheese made from raw milk, if the cheese is aged at a temperature of at least 35ºF for no less than 60 days. Blue, brick and cheddar are a few of the cheeses that fall into this category.Point Reyes Farmstead Cheese Company was just one of the raw milk-blue cheese producers on display at ...

Most of us circle a few days of the calendar year that we know will be difficult to get through: the anniversary of a death, traumatic event, or even happy occasion. These dates are charged with emotion. September 11 falls under that category for most of us, and especially those living in New York or surrounding areas and families and loved ones of those killed in the terrorist attacks. The one benefit from anniversary anxiety is that we can predict it and therefore prepare for it. Here are 8 ways to do just that.
1. Forecast your emotions.
You’ve circled the day. You know it’s coming. Now get honest with yourself about how you might feel on that day. If it’s the anniversary of a death of a loved one, get ready to celebrate that person’s life with joy and sadness. ...

It's no wonder the fig has been enjoyed for centuries. Its sweet, delicious flesh was long used as a sweetener before the advent of refined sugars. The fig tree was mentioned prominently in The Bible (some scholars believe the forbidden fruit picked by Eve was a fig rather than an apple), but it has been around much, much longer. Sumerian stone tablets dating back to 2500 B.C. record the usage of figs. How to Select and StoreWhen you s...

February 9, 2009Late last month, three pregnant Illinois women developed listeriosis after consuming different types of soft cheeses made from raw milk. The three women all were infected with the same strain of Listeria monocytogenes, suggesting that the various cheeses all were made from the same milk source. All three women transmitted their infection to their infants during their pregnancy. Two of the women miscarried; the third gave birth to a baby that was infected with Listeria monocytogenes.Coincidentally, the New York State Department of Agriculture and Markets warned the public last week against consuming a specific batch code of Queso Fresco produced by Peregrina Cheese Corp. (342 Ten Eyck St., Brooklyn, NY 11206) after detecting Listeria monocytogenes in a sample of the cheese.A...

It was one of those textbook-style outbreak investigations – the kind that epidemiology lecturers dream of. Quickly noticed. Quickly traced. Quickly over. Here's what happened. In late August, the Québec Ministry of Health (MSSS) noticed an unusual cluster of salmonellosis reports, all caused by a single genetic strain of Salmonella Enteritidis. An epidemiological traceback pointed to cheeses manufactured by Fromages La Chaudière Inc. The implicated cheeses – available for sale between July 24th and August 24th – were recalled on August 29th.The outbreak lasted approximately 3 weeks. The 111 confirmed victims reported onset of their symptoms between August 7th and August 26th, with most of the victims falling ill during the August 10-15 time period. No additional outbreak-associated...

In case anyone is wondering why the Québec Ministry of Agriculture's recall of cheeses seems to be never-ending, the Ministry of Health and Social Services (MSSS) made the reason clear in its press release yesterday. For readers of this blog who don't understand French, following is our translation of the key explanatory paragraph:The Department of Public Health Protection recommends that the public not consume cheeses cut and purchased before September 7 at any one of the 300 retail points of sale reported by the Québec Ministry of Agriculture, Fisheries and Food (MAPAC). It is possible that these cheeses have been in contact with cheeses contaminated by the bacterium Listeria monocytogenes.
It seems like only yesterday – it was about a month ago – that the the province of Quebec announced that it would be introducing new rules to allow local cheese makers to produce and sell raw milk cheeses. The Montreal Gazette celebrated this epiphany on the part of the province's food regulators with an unequivocal "It's about time."In fact, it's about safety – or the lack of it. During the month of August, Quebec health authorities noticed an unusually high number of reported cases of Salmonella gastroenteritis in the region south of Quebec City, in the central part of the province, and in the Eastern Townships. At last count, 87 people were infected with the outbreak strain of Salmonella Enteritidis. One elderly person died, and at least 40% of the victims were hospitalized brie...

The Canadian Food Inspection Agency announced two recalls late yesterday evening, both due to contamination of a food with Listeria monocytogenes. Both recalls affect consumers in Quebec and Ontario.Listeria monocytogenes usually causes mild flu-like symptoms or a mild gastroenteritis. But an infection with this microbe can cause pregnant women to miscarry, and may result in severe illness – even death – in the very young, the elderly, and immunocompromised individuals.Sliced MushroomsContinental Mushroom Corporation Ltd. is recalling three varieties of sliced mushrooms that may be contaminated with Listeria monocytogenes. The following three items, all sold in 227g packages and carrying lot numbers beginning with 200 to 214, inclusive are:Continental Quickslice Triple-Washed (UPC 0 64...

On May 30th, Fresca Italia recalled a single production batch of its Burrata Italian-style fresh cheese after the California Dept. of Food & Agriculture detected Listeria monocytogenes in the product. The cheese, which was sold in restaurants and retails stores in Southern California and the San Francisco Bay area, was labeled with the manufacturer's name “Caseificio Voglie di Latte” and an expiration date of 24/5/2008.Tests carried out subsequently by FDA found Listeria monocytogenes in additional batches of Burrata.
Visiting France again this spring, we spent a few days in Cannes – arriving the last day of the film festival. While exploring the center of town, we discovered that Cannes has several outdoor market areas. These markets, each of which fill a city block, are open six days a week. We spent a couple of hours browsing through one of the markets, just a block from the rue d'Antibes, Cannes' main shopping street. The first market stall we encountered offered a variety of vegetables, including some luscious tomatoes that were still on the vine. "La vendeuse" was proud of her selection of grapes, cherries and strawberries. We purchased some grapes and strawberries to take back to our room for a snack. This customer examined the produce with great care before finally making her selection. The market...

When USDA's Food Safety and Inspection Service is faced with a contaminated food that is a clear and present danger to consumers, and a processor that refuses to act, the agency can threaten to withdraw its inspectors, effectively shutting down the processing plant.FDA doesn't have that luxury. FDA inspectors must coax, cajole and convince a recalcitrant food processor to issue a voluntary product recall. As the Mars Petcare story clearly shows, this is not always a satisfactory solution.Sometimes, a processor's breaches of safe food handling practices are so egregious that FDA has no choice but to seek a court injunction and shut down production until the company corrects its unsafe practices.FDA announced today that it has shut down the operations of Hope Food Supply Inc., of Pasadena Te...

Q: I just have a quick question about cottage cheese. I really like the stuff however I find it doesn’t sit well with me. I currently am using a 4% one. Would you recommend I try the lower % fat cheese since it may be the fat content that’s causing me difficulties with digestion?

Mike: The problem here is most likely the lactose (a carbohydrate found in dairy products) and not the fat in the cottage cheese. I would look for the Lactaid brand cottage cheese or cottage cheese that contains live cultures (Cabot is a brand that does).
Lactaid cottage cheese will contain lactase the enzyme responsible for digesting lactose and thus will most likely help relieve your symptoms.
If you buy cottage cheese that contains live cultures the bacteria can help digest the lactose and ma...

AlzheimersNotes.com
When Alzheimer’s patients no longer can feed themselves by using utensils, try some finger foods. I found that Mother still could pick up bite size pieces and realize they should go into her mouth. (We just had to be careful the items she was picking up were edibles.)
As I read Kendra James’ post at Diabetes Notes today, Fruit Kabobs Were The Highlight of My Day, I recalled the appeal of finger foods for Mother when she had Alzheimer’s. Kendra tells of the fruit kabobs she had for lunch.
Fruit and cheese kabobs that my 7 year old made. They were really good, just chunks of cheese and berries, bananas, apples and grapes on a bamboo stick. She had fun making them too!
It made me hungry reading about them.
What can you think about for yo...

I was flipping through my emails and came upon this little video that was sent to me from the dLife Team. I am always one for new and diabetic friendly recipes, and the good ones are few and far between, so I though I would share this video with you. The chef, Chris Smith, the “diabetic chef, shares a great recipe for phyllo asparagus wraps with salsa dip and dishes the dirt on picking a good cheese. I should also share that I love asparagus… I will stop short of sharing why my kids are fascinated with it (it makes EVERYTHING green, haha). I was thinking, you could even throw some chicken breast in with it and not really change the carb content, and it would be more of a light meal! Enjoy.

How would it be if we take a break from our pain, our weather problems and the vagaries of Mother Nature to share a few holiday memories? Why don’t we share some of our favorite holiday recipes just as we would if we could gather around my kitchen table in the morning and share recipes over a cup of coffee or hot herbal tea? This is the Northwest so it’s raining outside, big surprise there. It’s warm and cozy inside, there’s the faint aroma of cinnamon pinecones and potpourri in the air, there’s a dog lying at your feet and we’re sharing, as good friends do. We have survived another year. That’s reason enough to celebrate.
My holiday memories are filled with thoughts of delicious food, aren’t yours? When I think about Christmases past, the tastes and the odors of the season...

Filed under: Type 1, Type 2, Diet, Lifestyle, ResearchI was intrigued by a recent Swedish study reporting that people on a so-called "Stone Age" diet had more stable blood sugar levels than those on a Mediterranean diet. An intriguing claim, because it's so often said that Mediterranean-style eating is super-healthful. Let's also admit it is a delicious way to eat: yes, pasta and bread is there, but it's balanced out by tons of fresh fruits, vegetables, fish and olive oil. The Stone Age way is a bit more spare: we're talkin' meat, fish, and lots of whole grains, berries and nuts. Nary a sliver of Parmesan in sight. However, the results of yet another study, this time from Australia, indicates Mediterranean-style eating is a good choice, especially for diabetics. Researchers from the Univers...

A 6-year-old boy in the UK is the youngest person to be treated for anorexia. MetroDad at Babble writes:
According to an article from the UK’s Evening Standard, a study released today reveals that a six-year-old is the youngest boy to be treated for anorexia. The NHS study shows that in 2003, UK hospitals made 93 admissions of boys under 10 with eating problems, compared with 21 admissions of girls. While most of the girls were treated for eating disorders that were similar to those encountered by their older counterparts, the young boys were more likely to be suffering from selective eating, where they will only eat a very narrow range of foods.
From the time he was two years old, six-year-old Nicholas Pilcher ate nothing but cheese spread (Daieylea) for four years. While “suc...

Filed under: Diets, Obesity, Worthy WisdomI wrote recently about the hidden amounts of sugar found in the foods we love so dearly. I learned all about this topic during my visit to Tucson's Canyon Ranch -- a world renowned health and healing destination -- and this sweet lesson came right as I'd decided to rid my diet of as much sugar as possible. Learning that one can of soda houses 12 teaspoons of sugar and a typical container of fruit yogurt has eight sealed the refined sugar deal for me. No more, I say. It's just not worth it.Now here comes the lowdown on fat. Some say the fat we eat is the fat we wear. Perhaps. But one thing is for sure -- fat kills. That's Fit blogger Rigel Gregg wrote a May 24 post all about it, documenting five ways wearing fat can kill us -- it strains our heart a...

But if it is broken, then by all means -- fix it.Many of us have broken pantries. Pantries full of chips, cookies, candies, oils, sugars, and well, let's just name it: junk.
